How to Make Traditional South Indian Moringa Soup (Murungai Keerai Soup)

If you are using fresh moringa leaves, here is a quick, traditional recipe:

Ingredients:

  • Moringa leaves: 1 small cup (washed and cleaned)

  • Shallots (small onions): 5 to 7 (chopped)

  • Garlic pods: 4 to 5 (crushed)

  • Cumin seeds (Jeera): 1 tsp

  • Coriander seeds: 1 tsp (optional, adds a nice aroma)

  • Black pepper powder: 1 tsp (adjust to taste)

  • Tomato: 1 small (finely chopped, optional for tanginess)

  • Water: 2 to 3 cups

  • Salt: To taste

  • Ghee or butter: 1 tsp

Step-by-Step Instructions:

  1. Sauté Aromatics: Heat a teaspoon of ghee or butter in a pan. Add cumin seeds, coriander seeds, crushed garlic, and shallots. Sauté for a minute until fragrant.

  2. Add Leaves: Toss in the fresh moringa leaves and chopped tomatoes. Sauté lightly for another minute.

  3. Boil: Pour in 2 to 3 cups of water and bring the mixture to a rolling boil. Let it simmer on medium heat for about 8 to 10 minutes so the extract blends into the water.

  4. Strain or Blend: You can strain the broth for a clear soup, or blend the boiled leaves and strain it through a sieve for a thicker, richer texture.

  5. Season: Stir in freshly ground black pepper powder and salt to taste.

  6. Serve: Serve piping hot as a comforting health drink.
